I.Chef de Cuisine

Job Description:

* Reports directly to the Executive Chef.
* Is responsible for the implementation, development and smooth opening of the Kitchen of the hotel’s All Day Dining Restaurant.
* Ensures that the Kitchen of the All Day Dining Restaurant is managed efficiently and according to the established concept statements.
* Adheres at all times to the Mandarin Oriental Hotel Group international Policies & Procedures, Fire Life Health Safety & Security and HACCP Standards.
* Organizes food production in a cost effective and hygienic manner.
* Prepares menu in accordance with quality, availability and seasonality ingredients and ensure market lists are completed on a daily and weekly basis.
* Assists in formulating, coordinating and supervising menu planning and implementation.
* Ensures food standards and presentations are maintained and continuously improved.
* Assists the Executive Chef with recruitment and continuous training of all kitchen colleagues.
* Strives constantly to improve operating procedures.
* Identifies opportunities for improving the efficiency of the operations that will benefit our guests.
* Identifies opportunities for reducing costs without affecting the level of service or product received by our guests.
* Proposes, and initiates when approved, new services and products for our guests.
* Uses the Colleague Handbook in understanding the consistent way of Communicating Rules & Regulation to our Team.

Requirements:

* High School Diploma or Equivalent
* Two year degree or Apprenticeship
* Current Sanitation class certificate.
* Minimum of 10 years in the luxury hotel culinary business
* Minimum of Five years Management Experience as a Chef de cuisine.
* Thorough knowledge of gastronomy
* Working knowledge of beverages
* Extensive knowledge of kitchen equipment
* Working knowledge of mathematics for recipes, ordering, and financial research purposes
* Working knowledge of computers and basic software
* Ability to delegate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience
* Possess a good written and verbal command of the English Language.
* Possess a pleasant and outgoing personality.
* Passionate, creative and an excellent hands on trainer

II.Shift Engineer

Duties and Responsibilities

* To maintain proper and safe condition of all Plant, Plant Rooms, Equipment and Work areas.
* Adheres at all times to the Mandarin Oriental Hotel Group international Policies & Procedures, Fire Life Health Safety & Security and HACCP Standards.
* To perform Emergency Response Team duties as required.
* To be courteous, professional and service orientated when dealing with Guest and colleagues.
* To carry out all tasks in accordance with The Mandarin Oriental, Jakarta planned Maintenance Program.
* To familiarize him-/herself with the technical details of all Plant and Services relating to the Hotel.
* To maintain, repair, check and record equipment relating to:

1.Guest Facilities
2.Plant Rooms
3.Air Conditioning Equipment
4.Refrigeration Equipment
5.Electrical and Mechanical Services
6.Plumbing and Heating
7.Entertainment Equipment
8.Kitchens
9.Lighting
10.Furniture, Fittings and General Equipment

* To supervise and support actively the Shift Technician.
* To ensure all log books and records are kept up to date.
* To assist Engineering colleagues with technical advice and ensure standards are met at all times.
* To deputize the Engineering Manager and Project Engineer in their absence.
* To assist actively in Energy Conservation and Control.
* To ensures that Mandarin Oriental Hotel Group Legendary Quality Experience Standards are fully maintained throughout his/her shift and exceed our guests’ expectations.

Requirements

* Secondary education and a Diploma in Electrical Engineering.
* At least 4 years of working experience in Building services of high rise building.
* Must possess a warm and pleasant personality and is able to work well in a team environment.
* Must be able to read and interpret diagrams/drawings and be computer literate.
* Must possess some Fire, Life, Health and Safety certificates.
* Must possess a good knowledge of BMS (Building Management Systems) and associated equipment.
* Must possess certificate of fitness on Fire standpipe, sprinkler systems, FSD (Fire Safety Director) and Fire Alarm interior system.
* Must possess a good knowledge of computer programs such as Microsoft DOS, Office, Windows, Outlook, Access etc.
* Good written and verbal skills in English and Indonesian.
